A pleasant alternative to the standard pot roast, this is a variation from a Southern Living recipe.
Put chuck roast, sliced onion and shrooms in 6 qt crock pot
Whisk together gravy mix, beef broth, wine and tomato paste and pour over meat (will not cover meat completely)
Add bay leaf, Cover and cook 6 hours on HIGH
Remove bay leaf, serve over egg noodles or rice
I brown the meat and don't bother to cut, it falls apart on it's own as it cooks.
I've substituted tomato sauce before and it turned out fine.
