preheat oven to 225.
Beat flour, salt, sugar, egg, 2 tbsp oil and beer in bowl and refrigerate (cold batter not required but make a fluffier batter).
Rinse and pat dry fish and cut filets 1/2 along spine . If using shrimp, shell and devein.
Heat oil to 365 in heavy pot or use deep fryer.
Dip seafood in batter and carefully into oil. Move around periodically to ensure all sides in oil.
Fry until golden brown. Remove from oil, place on foil-lined baking sheet and sprinkle with salt. Put in oven to keep warm while making next batch.
