1. Preheat oven to 375 degrees. Coat 9x12 loaf pan with cooking spray.
2. Cook bacon in frying pan over medium heat for 3 - 4 minutes, drain off on paper towels.
3. Mix flour, baking powder and salt into a large bowl.
4. Beat the egg and add in the honey, mix well.
5. Pour mixture into flour mixture and stir well.
6. Add the beer and mix the batter well.
7. Add in the bacon and cheddar cheese and gently stir to incorporate well.
8. Pour batter into pan.
9. Bake for 50 minutes or until a toothpick inserted into the middle of the bread comes out clean.
10. Allow bread to cool in the pan for 5 minutes before inverting onto a wire rack.
11. Cool for another 10 minutes before cutting.
