Suggest a better descriptionPreheat oven to 400 degrees. Pierce beets a few times. Place in a baking dish and cover with foil. Roast beets until tender, about 1 hour. Remove from oven and let beets sit until they are cool enough to handle. Peel off skin. Grate beets into a bowl or chop with a food processor. Mix in goat cheese.
Prepare Basic Filled Pasta Dough according to directions.
Boil a pot of lightly salted water. Drop pasta on boiling water and cook for no more than 5 to 6 minutes. Scoop out with a strainer (do not use colander).
Take cooked pasta immediately to a pan with prepared sauce and turn out on serving plate.
