Cut off the beet greens, if attached, leaving about 1 inch of stem.
Wash the beets under running water.
Wrap beets in aluminum foil and bake @ 375 F (190 C) for about 45 min. for small beets (60-75 minutes for larger beets)
The beets are done if they're soft when pierced.
Remove skins and slice or chop. (they are easier to peel when they're cold)
Serve hot or cold, sprinkled with sea salt.
