Mix all the dressing ingredients, reserve 2 tbsp for later
Put the dressing in a large plastic bag and add the veg coating it all evenly.
Layer the veg on a baking tray (see pic) drizzle any dressing left behind in the bag over the veggies.
Roast for 30-35 mins or until cooked through.
Top with the goats cheese dividing the reserved dressing over each cheese.
Return to the oven for 5-10 minutes until gently softened.
