This is a medicinal, detox soup.
Combine everything except the parsley and sunflower seeds in a large pot and bring to a boil.
Simmer an additional 5-10 min, until the vegetables are parboiled but not soft.
Remove from stove, add parsley and cover.
Allow to cool.
Blend in a blender.
Serve or refrigerate
Sprinkle sunflowers seeds on top for crunch (optional)
