In a bowl, combine dry ingredients (flour, sugar, baking powder, salt). In another bowl, combine lightly beaten egg yolks, milk, melted butter, and vanilla. Mix well. Stir into dry ingredients until just combined. Do not over mix. Beat egg whites until stiff peaks form. Fold into batter.
Bake in a pre-heated waffle iron according to mfg directions.
