Preheat oven to 350 degrees.
Remove stem and seeds and then cut peppers into quarters.
Spray a large baking sheet with nonstick cooking spray.
Place peppers cut side up and bake for 20 minutes.
Meanwhile, cook bacon until crispy.
Remove peppers from oven and use a paper towel to blot away excess liquid.
Sprinkle peppers with shredded cheese, onion and bacon.
Return to oven and bake 5 minutes until cheese melts.
Serve with sour cream.
Colored peppers are sweeter than green ones.
