Preheat oven to 180 degrees.
Oil a foiled baking tray (to stop sticking) and season the tray generously with Salt and Pepper. Lay the rashers over the seasoned tray and apply the same amount of generous seasoning to the top side and bake in the oven for 15 mins (or to your liking).
Whilst the bacon cooks, shred the lettuce and slice the tomatoes and set aside. Lightly toast the bread as well and allow to cool down (preventing soggy toast when buttered).
In a ramekin add the Mayo and ground Black pepper and mix well.
When the bacon is done, construct as below:
Lightly toasted, buttered slice - Rashers of bacon - Sliced tomatoes - Shredded lettuce - Generous spread of the peppered Mayo (don't be scared of it) and cut diagonally in half in triangles.
