This is a simple and easy gingerbread cookie recipe that results in a cake-like texture and perfect sweet-to-spice ratio. Enjoy!
Recommended: Pipe with Eggnog Cream Cheese Frosting
Preheat oven to 350 degrees F
1. Mix flour, ginger, cinnamon, baking soda, nutmeg and salt in large bowl.
2. Beat butter and brown sugar in large bowl with electric mixer on medium speed until light and fluffy. Add molasses, egg and vanilla; beat well.
3. Gradually beat in flour mixture on low speed until well mixed.
4. Form dough into ball and wrap in plastic wrap for a minimum of 4 hours (dough will be sticky!)
Four hours later...
5. Roll out dough to desired thickness on lightly floured work surface.
6. Cut into gingerbread people shapes with cookie cutters and place on parchment covered baking sheets.
7. Bake 8 to 10 minutes MAX(do not over-bake!); cookies will continue to bake on sheets after removed from oven.
8. Cool on baking sheets on stove or wire rack for 1 to 2 minutes. Remove from pan to wire racks; cool completely.
Decorate cooled cookies as desired with favorite frosting (i.e. Eggnog Cream Cheese Frosting)
