Preheat oven to 350.
Place a wire rack on a rimmed baking sheet.
Trim ends of sweet potato and slice even, and thinly lengthwise.
Place slices on wire rack and cook for 15-20 minutes until the potatoes are tender. Store in fridge up to 4 days.
To serve, place sweet potato slices in toaster on medium setting until edges are crispy. Serve with the almond butter and blueberries.
