Step 1: Place ingredients in a blender and blend until smooth (1 - 2 min).
Step 2: Place a large piece of wax or parchment paper on your counter to transfer cooked ProCakes.
Step 3: Spray a griddle or large flat skillet w/ canola and heat on high.
Add your suggested portion batter per ProCake using a measuring cup. When it’s “dimply;“ (about 2 min.) flip once. ProCakes will be golden. Remove to the parchment paper to cool.
Step 4: After you make all the ProCakes, cool completely. Stack by separating each ProCake with a piece of wax paper. Store in a zip-loc bag or a container in your refrigerator for up to 4 days. You can freeze them for up to a month. Reheat on a griddle or in the microwave.
