1. Preheat oven to 350ºF.
2. In a dry skillet over medium heat, toast walnuts until just fragrant, about 5 minutes. Allow to cool and reserve.
3. Grease the bottom and sides of a loaf pan with butter, dust with flour, and tap out excess.
4. In a large bowl, whisk together the flour, sugar, brown sugar, salt, and baking soda. Fold in walnuts and chocolate chips, and reserve.
5. In a medium bowl, mix together mashed bananas, plain yoghurt, eggs, butter, and vanilla.
6. Fold the wet banana mixture into the dry ingredients until just combined. Do not over stir, you want the batter to remain quite thick and lumpy. Scoop it into your prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
7. Allow the loaf to cool in the pan until ready to serve.
If your bananas aren't quite ripe enough for your liking (or you just want to up the banana bread ante), baking them in their skins for 15-30 minutes in a 300 degree oven will bring out a depth of flavor that is unparalleled.
