Hands down the most enjoyed banana bread recipe by my family. Sprinkle the top with mini chocolate chips before baking for a special treat. Cocoa nibs are also a great addition to texture and chocolate flavour without extra sugar.
Preheat oven to 350 degrees F. Grease 2 mini loaf pans, 1 regular loaf pan or 1 bunt pan.
Cream together both sugars and butter in a medium bowl. Add the eggs, milk and bananas and combine.
Add the remaining ingredients (except the chocolate chips) and mix until just moistened.
Pour into the prepared pan(s) and sprinkle with chocolate chips (if using).
Bake for 45-60 minutes or until a toothpick inserted in the middle comes out clean.
I prefer to blend the bananas with my hand blender to puree them completely. I think this is the trick to obtain the uniform, 'coffee shop' style banana bread that the kids love.
