preheat oven to gas mark 4
cut chicken into strips and place into bowl with lemon juice and zest
add all dry ingredients to a separate bowl and pour in the olive oil until a paste is formed add the garlic clove and stir in the chicken until coated in paste on a baking tray place the sliced onion and peppers on the bottom of the tray to act as a barrier from the oil that drains and to add a really mouth watering taste while cooking
place the chicken strips on the top of the peppers and onion and cook on the middle shelf of the oven for 30 mins approx
times are approximate different sized ovens cook at different times ensure chicken is piping hot throughout hope you enjoy
