Cook bacon or pancetta on medium heat in a large stock pot until fat is mostly rendered.
Add onion, carrots and celery and cook, stirring often in the bacon fat until onions are translucent
Add garlic and stir quickly for 30 seconds--don't let the garlic burn!
Add tomato paste and stir until combined.
Add wine and stir until bubbling (3 minutes), deglazing all the browned bits.
Add tomatoes, stock and lentils.
Bring to a boil, then reduce to simmer. Add bay leaves and thyme bundle.
Continue to cook on stovetop until lentils are tender or move to a slow cooker and cook on low for 3-4 hours.
Add balsamic vinegar just prior to serving.
Garnish with a dollop of Greek yogurt and sprinkle with scallions.
