Recipe given to me by Dave Fennel.
Combine oats and buttermilk in a bowl and let stand.
Combine dry ingredients in a separate bowl.
Add egg and melted butter to oat mixture. Mix well.
Add oat mixture all at once to dry ingredients. Stir until moist.
Stir in fruit and bananas.
Fill muffin tins.
Bake at 400F 24-26 min.
Variations include banana-chocolate chip, raspberry and blueberry
