Place oats in pan or bowl with lemon juice and water to cover and soak overnight
Drain oats in a fine mesh sieve and rinse well under cold running water. Combine oats, water, and salt in a saucepan and bring to boil over med high heat. Cover, lower heat and stir in dried fruit, cinnamon, ginger, and cardamon. Continue cooking stirring for 10 min. Stir in maple syrup and milk and serve with toasted nuts
