Place all ingredients in a large stockpot. Bring to boil then reduce heat to low and cook, uncovered, at a bare simmer until wings fall apart, about 2 hours.
Strain and discard solids. Return strained broth to pot, simmer over medium low heat until reduced to 8 cups (about 1 hour). Transfer to a large metal or plastic bowl and put on top of another bowl filled with ice. Let stand until it cools to room temp.
Store, in refridgerator up to 3 days or freeze up to 3 months.
Melt butter in a large saucepan until sizzling. Sprinkle 1/4 cup flour, whisking till smooth. Cook, whisking constantly for 2 min.
Add 4 cups turkey broth in slow steady stream, whisking constantly. Cook, whisking often, until gravy comes to simmer and thickens (6-9 min). Remove from heat, and cool for 30 min. Pour into bowl or jar. Cover and refrigerate up to 3 days. To serve, reheat gravy over low. Stir in 2 tbsp. heavy cream, 2 tbsp.bourbon, 1 tbsp fresh thyme, 3/4 tsp black pepper and 1/2 tsp salt.
