Pick over a cup of black beans and soak them overnight.
Drain them in the morning, add 3 to 4 cups of water -- the water should be a good inch above the beans in the pot
Add onion, epazote and olive oil. Bring to a boil, cover, turn the heat down and simmer for a couple of hours until the beans are tender.
Remove the epazote, stir in wine and soy sauce. Taste for seasoning. Add salt and pepper.
