Preheat oven to 400 degrees. Grease 18 mini muffin cups. Beat egg and maple syrup together. Add apple sauce, olive oil and vanilla. Whisk together dry ingredients. Add to the egg mixture and mix until well combined. Add carrots, walnuts and raisins. Mix until just combined. Spoon into 18 mini muffin cups. Combine sugar and cinnamon. Lightly top each muffin with the mixture. Bake about 11 minutes, just until a toothpick comes out clean.
