Suggest a better descriptionPlace beans in 5 qt pan and cover with water to about 2 inches above beans. Soak over night. Drain and rinse beans. Place beans back in pan. Put in diced onion and the ham hocks. Fill pan with water to cover beans and ham hocks. Put in salt and pepper. cook on high heat till it comes to boil. Reduce heat to low-medium and cover with lid. Cook for 2-3 hours or until beans are tender. Uncover and remove ham hocks. Strip meat off ham hocks and place meat back in pan. Take a potato masher and mash a little bit of the beans to allow to thicken. Remove from heat and serve.
The more or less you mash the beans the thicker or thinner the soup. Can also add other veg during cooking process if you wish.
