In the bowl of your mixer manually whisk the water, salt, sugar and yeast and let dissolve for 10 minutes or so.
Add the oil and then the flour.
Mix with a dough hook until a dough ball is formed and pulls cleanly from the sides of the bowl.
Transfer the dough ball to an oiled mixing bowl. Cover with plastic and let rise for 60-90 minutes.
Preheat your grill to 450°F and set up for indirect cooking on the pizza stone by placing 18" oval stone on bottom settings, placing grill on highest setting then top with 18" pizza stone.
Add 3-4 quarts of water to a stock pot. Dissolve the reserved baking soda in the water and bring to a slow boil.
Remove dough from bowl and divide dough into 8 or more equal sized pieces.
Roll each piece into a rope 18" long and then shape into a pretzel.
Put the pretzels in the water for 30 seconds. Flip the pretzels and let them remain in the water for another 30 seconds (may do in batches).
Make an egg wash with the beaten eggs and 1 tablespoon of water. Brush the egg wash on the top of the pretzels. Sprinkle coarse salt on top of the pretzels.
Place the pretzels on the pizza stone directly or on parchment paper to reduce the chance of sticking. Cook for 15-18 minutes or until golden brown. Remove from the grill, let cool and serve with a side dish of the Guinness mustard!
