A family favorite, especially among the kids!
Cut a hole in the center of the bread slice and lightly butter one side. Heat a skillet over medium-high heat. Add one tablespoon of butter and when it begins to foam, add the slice of bread, unbuttered side down, and break the egg into the hole. Sprinkle the cheese over the egg. When the bread begins to brown, about 3-4 minutes, flip it and fry to desired doneness, about 3 minutes for a runny yolk .
Substitute a bagel, cut in half, but enlarge the hole and put cut side down initially. Variations include adding crumbled bacon, crumbled pork sausage, or country ham slice after the cheese is added. My Mom called that "A Pig in a Poke."
