Excellent biscotti cookies
1) Pre-heat the oven to 350 F. Lightly oil cookie sheet or use a silpat. Set aside. Mix flour, baking soda, baking powder, and salt in a separate bowl. Cream butter and sugar. Add eggs one at a time beating well after each.
2) Add dry ingredients, and craisins. Dough will be quite soft (Refrigerate if needed). Drop dough onto the counter or cookie sheet and divide into 2 even logs, each about 8" long and 3-1/2" wide. Keep logs well separated as they will spread in the oven.
3) Bake 20-25 minutes until golden. Remove from the oven and cool slightly. When the logs are cool enough to handle (don't cool completely), slice them into 1/2" to 3/4" slices. Turn slices on their side and bake for 5-7 minutes. Turn and continue to bake until golden on both sides and a little crisp. Cool on wire racks.
