A terrific make ahead dessert. Especially good served with semifreddo (frozen Italian mousse).
- Cream butter, sugar and salt until light and fluffy.
- Add citrus zest and extract.
- Add the eggs one at a time, scraping the bowl well after each addition.
- Sift together the dry ingredients and add them to the butter mixture.
- Stir in the almonds.
- Divide the dough into thirds and shape into logs that are about 1 1/2" thick. Flatten the logs slightly. Bake 1-2 per cookie sheet.
- Bake at 325 F for about 25 minutes until lightly golden.
- Lower oven temperature to 275 F and let the logs cool.
- Slice the logs on an angle into 3/4" slices. Bake, cut sides open to air for 40 minutes more. The biscotti should be golden on both sides. Let cool, shake off crumbs and dip each end into chocolate or stripe with chocolate using pastry bag.
