This is just a basic recipe that is so easy. It comes out light and fluffy, without a lot of work. I was told by my mother-in-law that if you make a small indention with your thumb in the center of each biscuit, they will bake and rise evenly.
Preheat oven to 350 degrees.
In a baking sheet pan, add a sheet of parchment paper to the bottom for easy clean up. Cut up the cold butter into small cubes and coat them with a layer of the flour. Set aside in the fridge until ready to use.
In a medium-sized mixing bowl, sift together the baking powder, buttermilk powder, and 2 cups of the flour. Stir with a whisk. Add the cold butter cubes and cut it into the flour mixture with a pastry cutter until it is in small pieces.
Add the water and stir JUST until all the flour is mixed in. (The dough will be soft, moist, and still be a little sticky). Pinch off a piece of the dough a bit bigger than a golf ball. Roll it in the remaining flour. Tuck it into itself to make a ball and place it on the parchment paper. Pat it out to a 1/2" thick layer. Arrange the remaining biscuits next to each other (touching) on the baking sheet pan. Let the biscuits set and rise for about 5 minutes. Place in the oven and bake for 15-20 minutes or until brown on the bottom and lightly browned on top.
Remove and coat the tops with a layer of butter before serving.
The less you handle the dough, the lighter the bread will come out. Make sure to check the expiration dates on your baking ingredients!
