Preheat oven to 450 F (230 C). Whisk first 4 ingredients in a large bowl. Cut in shortening with a pastry blender or 2 knives until mixture resembles coarse crumbs. make a well in the center and pour in milk. Immediately stir dry ingredients into the center until a rough dough results. Scrape out onto a lightly floured surface. Gently kneed for 30 seconds folding the dough over on itself then pat it out to a 3/4" (2 cm) thickness. Using a 2 1/2" (6 cm) cookie cutter, cut out 8 biscuits using up all the dough. Arrange on a parchment lined baking sheet and bake for 12-15 minutes or until lightly golden.
These biscuits are easy to get creative with. Try these ideas:
Simply sweet: Increase sugar to 2 Tbsp (30 ml). Glaze with cream or melted butter and a sprinkle of sugar before baking.
Cinnamon and raisin: Add 1/3 c. (80 ml) raisins and 1/2 tsp (2.5 ml) ground cinnamon. Brush with milk and a sprinkle or sugar before baking. Add orange Zest for a bright, citrus flavour and aroma.
Simply Savory: Add 1 Tbsp (15 ml) of your favorite herbs or spices for a delicious biscuit to serve with soups, stews and chili.
Dress it up or make Cheesy biscuits: Add grated cheese into biscuit mixture or sprinkle on top before baking.
