In a large bowl, whisk together the dry ingredients. Cut in the shortening until the mixture resembles coarse crumbs. Gradually stir in milk until dough pulls away from the side of the bowl.
Turn dough on a floured surface and fold over a couple times until smooth. Do not over work. The more you work, the more the butter will melt. Pat or roll dough to about 1". Cut and place biscuits on a baking sheet. I like to use either a silpat or nonstick foil.
Bake 13 to 17 minutes depending on the size of the biscuit and the color you want
