Preheat oven to 330 degrees.
Spray three loaf pans with non-stick spray
** Cream the shortening/margarine/sugar mixture thoroughly. Add the demererra after.
**Beat in the eggs one at a time. PLENTY of time in between
**Stir in Apple Sauce. Add rum and butter flavoring
** Sift together the flour, salt, baking soda, cinnamon, cloves, and nutmeg. Add to the shortening mixture very gradually and mix to combine.
** After mashing the bananas stir them into the batter. After a little mixing, stir in the roughly chopped walnuts.
** This should produce roughly 11 lbs of batter or 2.5lbs per loaf.
5.) Bake the mini-loaf/muffin pans for 38 mins. Continue to bake the large loaf pans for a total of 45 to 60 minutes. Test with wooden skewer at 45
