1.) Cream 1 1/2 cup of the butter and sugars.
2.) Beat in eggs one at a time
3.) Add butter emulsion
4.) Put yeast in 1/2 cup of warm water with 1 tsp sugar for ten minutes
5.) Add mashed potatoes gradually. Slowly add potato water
6.) Change to dough hook in mixer
7.) Add yeast mixture and mix a little. Add in dried milk
8.) Mix until thoroughly combined. Then add to large bowl covering with saran wrap, top with towel and place in a slightly warm room out of the draft to rise for 2 hours
9.) After rising, spill out on to sheet pan and pat out until level and even. Place pan extender on sheet pan. Cover and leave another 3 hours to rise
10.) Melt two cups of butter and cool. Mix brown sugar and cinnamon together thoroughly with blender then by hand. Preheat oven to 400 degrees
11.) Play piano on the dough to create divots and release air in dough
12.) Cut half cup of chilled butter into cubes and push into dough
13.) Spread half the brown sugar/cinnamon mixture evenly over dough. Using a measuring cup pour the cooled melted butter over the entire surface of the dough. Sprinkle on the remaining butter/cinnamon mixture
14.) Then bake for 20 minutes. Be sure to check the bottom
