I use an instant pot, but any pressure cooker will do the trick.
In the instant pot add all ingredients except the cannellini beans and chicken. Reserve those two for the last step. Stir to combine.
Place cover on instant pot, secure lid, ensure pressure valve is closed. Turn on high pressure for 30 minutes.
When the timer is done, ensure pressure cooker is off and allow natural pressure release which takes about 30 minutes.
When the pressure has released, add the cannellini beans and chicken, stir. Check for taste and adjust seasoning as needed. Place the lid back on the pot without turning on for another 15 minutes (long enough for added ingredients to come to temperature).
Serve warm in bowls. We like to add hot sauce and a little sour cream to ours. Enjoy!
Ensure enough liquid in pot with beans, too little will result in either too thick or burned beans.
