Preheat oven to 350 degrees.
Set aside shredded Colby Jack cheese. Add remaining ingredients to food processor. Blend until smooth.
Spray an 8" x 8" casserole dish with cooking spray. Spread mixture evenly into the bottom of the baking dish. Sprinkle the top with both cheeses.
Bake for 20-25 minutes, or until cheese is melted and slightly browned.
Serve with tortilla chips.
