In a large skillet over medium heat, warm the olive oil until shimmering. Add the mushrooms, onion and garlic and cook, stirring often, for 8 minutes or until the mushrooms have given up their liquid and the liquid has thickened slightly.
Combine the mushroom mixture with all remaining ingredients, except sour cream, in the slow cooker. Mix well. Cover and cook on low for 5-6 hours, or high for 2 1/2-3 hours.
Serve with sour cream if desired.
