A great meal includes all the things.
1. Wash & dry produce (tomatoes, poblanos, cilantro, limes)
2. Make Jasmine Rice: Follow package directions (about 15-18 minutes to cook). Cover and set aside.
3. Cut vegetables for all the things: Black Bean Mix, Rice, & Pico. For Black Bean mix, slice poblanos and 1 + 3/4 onion; for the Rice, gather 1/8 cup cilantro, and zest a lime; for Pico, gather 1/4 yellow onion, cherry tomatoes, remaining cilantro.
4. Make Pico: Combine 1/4 yellow sweet onion, cherry tomatoes, cilantro, lime juice [at least 1 lime, maybe more], and salt and pepper. I use a small food processor. Taste and adjust seasoning.
5. Cook Black Bean Mix: Add oil in large pan (14-inch shallow pan works) on medium/high heat; Add sliced poblano, sliced onion and pinch salt. Cook 5-8 minutes until veggies are soft. THEN, stir in beans (plus liquid), 1-2 Tbsp concentrated veggie stock, Spice Blend (garlic powder, cumin, chili powder); add pepper. Simmer and cook until liquid is reduced.
6. Finish rice: Fluff with fork and still in zest from 1-2 limes and remaining cilantro. Season with salt and pepper.
7. Make sour cream with Spice Blend (maybe 1 Tbsp for 4-8 ounces?)
8. Wrap tortillas and nuke for 30 seconds.
9. Assemble - 1/3 cup rice, 1/2 cup filling, sprinkle cheese, add dollop of sour cream mix.
10. Heat completed wraps on a skillet to firm up the torts.
11. To serve, add small amount of rice, avocado or guacamole, and pico on the side.
