Soak beans as directed. Drain and rinse. Combine remaining ingredients in large pot and bring to a simmer. Sinner for about 2 hours, stirring occasionally to prevent sticking. Add water as needed to prevent it becoming too dry ( should be consistency of chili). When beans are tender, remove hambone. Roughly chop meat and stir into beans.
I didn't use salt because the ham is salty enough.
