Very quick and simple black bean tacos
Lightly coat a large nonstick pan with oil. Turn heat to medium high. Put four tortillas in the pan, and in each put black beans, salt, and shredded cheese. Heat the tacos, rotating once, until the cheese is melted, the beans are warm, and the outside of the corn tortilla starts crisping but is still bendable. You may need to turn the heat down to medium once the pan is hot. Remove tacos from the pan, and top with guacamole and pico de gallo.
