Yields 12 (1oz) 5" round
Prep Time: 20 minutes
Cook Time: 5-6 minutes
ASADA:
1 cup harina pan
2 tablespoons all purpose flour
3/4 cup, black beans (already cooked)
1 tablespoon vegetable oil
1 teaspoon kosher salt
1/2 cup water
In a blender place black beans, water, oil and salt. Blend until ingredients are well combined, about 30 seconds.
In a medium size bowl add the water and black bean mixture and slowly add the flours, stirring until well combined. The dough will start out loose but the flour will absolve the liquid.
Start to knead the dough in the bowl and once it becomes very soft and does not stick to your hands, after about 5 minutes, the dough is ready to be shaped. ( if while kneading, the dough seems to stiff and breaks apart, add a few tablespoons of water; if is too sticky, add a little more flour).
Divide the dough into 12 equal balls, 1.5 oz. each, and flatten in a tortilla press pressing about 3/4 of the way down into 4 inch rounds about 1/4 inch thick.
ASADA:
Heat a large skillet, plancha or griddle over medium-high heat. Place telitas in hot pan. Cook the disk until it is browned and crispy, 2 to 3 minutes. Flip it over and brown the other side, 2 to 3 minutes longer.
Remove from pan and place in a tortilla holder or wrapped in a kitchen towel.
FRIED:
In a fryer with oil at 350 degrees F fry each telita for 2 1/2 minutes on each side. Remove and place on paper towel. Serve immediately
