Super easy meal, full of flavor every one will LOVE!
Prepare Yellow rice as directed
While rice is cooking add onion, ground beef, garlic and cumin to skillet and cook until beef is browned and onions are translucent.
Add black beans and green chilies to ground beef mixture, stir and cover turning down burner to simmer.
Once rice is complete spoon a helping of rice on plate or bowl and add Black Bean mixture to the top.
I sometimes add a can of diced tomatoes to the mixture and top with cheddar cheese. Have fun and ENJOY!
