This quick and easy beans and rice recipe is friendly for those who like less-spicy food, but the spiciness could be ramped up for those who like their food to be hot hot hot!
Saute 1T olive oil, 2 cloves garlic (crushed), 1T dried minced onion (could use 1/2 of a fresh minced onion if preferred)
add 1/2 can vegetable, chicken or beef broth
add 1-2 bay leaves
add 1/8t chili powder (or to taste)
add a dash of dried oregano and a dash of ground black pepper
add 1T+ white vinegar and 1T+ white wine
add 1t brown sugar
Stir until sugar is dissolved and spices are mixed in.
Bring to a boil
add 2 cans black beans undrained
Boil, then reduce heat and simmer until thick
Serve over brown rice
