Mix ingredients in order given. Fill muffin tins 1/3 full (1 heaping tablespoon of batter). They rise a lot!
Drop a heaping teaspoonful of cheese mixture on top. Bake at 325 degrees for 20-25 minutes (use rack lower than middle).
I put chocolate icing on top of these and they are absolutely sinful!
