While crust cooks, put gelatin in cold water to dissolve. Scale milk in double boiler. Beat egg yolks slightly. Stir in combined sugar, cornstarch and pinch of salt. Slowly stir in milk. Cook in double boiler until custard coats spoon. Remove from heat, stir in gelatin.
Melt chocolate over hot water. Divide custard in half. Stir melted chocolate and vanilla in one half. Stir until smooth. Cook. Cover chilled crust with chocolate mixture.
Beat 3 egg whites and pinch of cream of tarter until glossy. Then add 1/4 c sugar and 2 t vanilla or run flavoring. Beat until peaks form. Fold in remaining custard. Pour over chilled chocolate layer. Chill until ready to serve. Too with whipped cream.
