Soak black-eyes over night. In the morning boil for 1-1.5 hours. Beans should be tender, but not mushy
Place beans and eggs in food processor. Blend on high for ~1 minute. I like the consistency of a firm paste, but you can leave the beans with more structure .
Move mixture to a large mixing bowl. Add oats, flour, onion, pepper, baking powder, and baking soda and seasonings to taste. Form into patties about the size of the palm of your hand. In a large fry pan, add one tablespoon of coconut oil and fry patties 2-3 minutes on each side until golden brown. Fritters should be golden brown on the outside, fluffy and firm on the inside!
