Preheat oven to 350 degrees.
Melt coconut oil over very low heat until melted. Measure from melted liquid .
Combine all ingredients except chocolate chips in processor and blend until completely smooth. Batter will be thick and slowly pourable.
Remove to a bowl and stir in the chips.
Use 2 oz. ice cream scoop into greased muffin cups until 2/3 full. Bake for 17 minutes.
Let cool 20 minutes before removing from muffin tin.
