Delicious, colorful and flavorful, quick and easy to make casserole that uses simple ingredients.
Dice, combine and saute 2 Bell Peppers, 1/2 Onion, 4 tbsp of butter and a dash of ground Oregano in a medium skillet on low-med heat until peppers and onion are golden brown. In a separate medium skillet, brown 1 package of sausage and drain. Add can of tomatoes (drained), 2 cans of Black eyed peas (drained) to the sausage and mix. In a Medium oven safe Casserole dish, combine peppers, onion, sausage, tomatoes black eyed peas to casserole dish and top with 2 cups of Shredded Sharp cheddar cheese. Place in oven @ 425 degrees F until cheese melts and is golden brown.
Serve with your favorite corn bread for a delicious meal.
