Blackberry Bliss Delights
(With a Twist)
This Recipe is double the mixture so you might want to half it!
2 cups of frozen blackberries
4 min speed 2 37degrees
(U can defrost blackberries or use fresh blackberries and just wizz up in blender)
Set aside and also put a small amount of mixture 1/4 cup (or less depending of how much coconut u want to coat with) in another separate bowel.
wash thermomix
Peel 2 lemons with peeler getting mostly the yellow off, place in thermomix speed 9 for 30sec
Or just zest 2 lemons
Add organic blackberry mixture
Add 20 organic medjool dates (take pips out)
Add 1 cup of organic sunflower seeds
Add 1 tablespoon of organic vanilla bean powder
Add 3 cups of organic dedicated coconut
Add 1 tsp of Himalayan salt
To the thermomix and mix on speed 6 or 7, you will need to use spatula to help it go down to the blades
Mix till you are happy with the consistency
You can use your blender but may have to use smaller parts
Now add 1 cup of organic desiccated coconut to a bowel and start to mix in the little bit of blackberry juice mixture to the coconut till you get the colour you like. Just be careful and only add little at a time otherwise the coconut will all stick together.
Make into 25 g balls then roll in coconut and your done!!!!
