2. Purée 1 cup fresh blackberries, vinegar, and Earl Grey sugar in a food processor until smooth. Strain through a fine-mesh sieve into a small bowl, pressing on solids; discard solids.
3. Arrange pears on plates; top with remaining 2 cups blackberries. Spoon blackberry sauce over top.
You can make a larger batch of the Earl Grey sugar and sprinkle it on sugar cookies, pie dough, or scones before baking.
