If you can get the grill hot enough (400) it might be better to do this outside
Heat cast iron skillet as hot as you can. It can't be too hot. Mix all of the seasonings. Dip the fillet in melted butter then sprinkle the season mix evenly over the fish evenly and generously. Place in hot skillet and pour a little butter over the fish. This will produce a lot of smoke, have the windows open and vent on if inside. It also may flare up. Cook each side for about 2 minutes
