Place diced potatoes in a sauce pan filled with cold water. Bring to slow rolling boil.
Boil for 10 minutes, then set aside.
Sauté chopped onion in a large nonstick fry pan until softened, approximately 2 minutes over medium heat.
Remove chorizo from casings, crumble and add to fry pan.
Mash with spatula and cook until crispy on the edges.
Meanwhile, place poblano chilies directly over gas flame until charred all over, approximately 2 minutes per side.
(Alternatively, place directly under broiler, turning often, so that skin chars all over)
Once chiles are charred, place on cutting board and cover with an overturned bowl. Let steam for 5 minutes.
Under running water in the sink, rub charred chiles until most of the skin is rubbed off.
Tear off tops of chiles, and remove the seeds and membranes. Some blackened skin left on is ok.
Dice roasted chiles and add to chorizo mixture.
Using the lid to the frypan, pour off most of the grease. Use a wadded up paper towel to remove more if desired.
Once chorizo mixture is brown and starting to get crispy, drain cooked potatoes and add to pan.
Cook for another 5 minutes, stirring, being careful not to beak up potatoes.
Take pan off heat and prepare corn tortillas. If using a gas stove, place tortillas directly over flame, turning often with tongs until lightly charred. Repeat with remaining tortillas. Keep warm by covering with clean towel.
(Alternatively, toast tortillas on a cast iron skillet over high heat, turning with tongs until lightly toasted.)
Assemble tacos with chorizo mixture, raw onions, cilantro and avocado slices. Add salsa verde if desired.
Corn tortillas from a Mexican grocery store are far better and worth the extra trip.
